A nostalgic Indian recipe: Kashmiri Pulav (how to make rice taste good)!

Hellows!

Today I feel Lousy…Maybe the post exam laziness.. :P But the happy thing is… its shopping time for me again this month! XD <3 so excited…So .. Because of my no plan of getting out of bed till the evening.. I decided to go for a recipe for the day: the recipe of the most awesome pulav I ever had in life.. :P … till now its going easy job for me… But its going to get complicated.. be ready for that! XD

Well in the restaurant they had it named Kashmiri pulav(in the menu) But Later the chef said they call it “Ihudi Pulav” as well..Anyway… whatever it was…pretty godamn tasty and with most unusual of ingredients went soo well together!

Enough chat… Lets start:

Ingredients:

  • Meat (any boneless and chopped in small cubes)—1 kg

  • Ghee—-500g

  • Vasmati rice—500g

  • Moong dal———300g

  • Ginger—–2 inch

  • Onions—-250g

  • White Cumin—-10g

  • White pepper—-10g

  • Bay leaf—-6

  • Garam Masala(non powdered)—-2 gms each

  • Sugar—-25g

  • Coriander Powder, pepper powder—–2 tsp

  • Salt—-s needed (remember this should be more on the sweet side rather than salty)

  • Rose water—-1 tsp

  • Pineapple pieces small—–200g

  • Green food color For the pineapples (later explained)

  • Pistachios—-10g

  • cashew—-20g

  • Raisins—-20g

  • Kesar— 5-10g

How to:

  1. Chop the nuts and raisins semi-fine and dip them in water.. Keep aside..

  2. Take the pineapples and cut them in medium small cubes and in a bowl mix 3 drops of food color(green / any u like)/[ dont put too much color]…dip the pine apples in that water and set aside

  3. In a smaller bowl dip the kesar in lukewarm water and set aside as well

  4. Crush the garam masala ingredients ..

  5. Slice the onions and wash the grains nicely

  6. Now Heat the ghee(/butter) in a pan and put in the bay leaf and cumin, pepper powders..

  7. them saute the onions and ginger for a while and add the meat to that..add a little sprinkle of water and cover. Fry it till brown (keep checking)

  8. Transfer the things to a deeper non-stick pan

  9. Add the garam masala mix ,rice and dal to the pan now and keep stirring the things for a bit more..

  10. when the whole thing is semi-brown.. put in the un-crushed (white) cumin and pepper

  11. When it turns brown…keep adding water (little at once) till the whole thing is an inch below water level.

  12. cook it till done… stir them at an interval of about 5 mins each time

  13. In the other pan now Heat some more ghee(/butter) … Fry the water soaked raisins ,cashew, pineapples and pistas for 3-4 mins and add sugar and lemon juice to the mix..take it off the heat and keep in a air tight jar for 10 mins

  14. After those 10 mins add the rose water

  15. By now the rice pan should be done… Pour the kesar water on the rice and mix well till it turns yellowish

  16. Add the nut and raisin mix thing to the rice as well and mix with a spatula…And you are done…!!

Serve hot… its beautifully tasty… Maybe next time I ll do a side dish for this one.. hmm..
